Lotus Root

   


Also known as lily root, this vegetable has a crispy, fibrous texture with a mild, distinctive flavor similar to that of an artichoke. It can be fried, steamed in soups, or used for tempura (batter-dipped, deep fried vegetable). Lotus root is also eaten raw in salads, or used to make an attractive garnish.
