Chinese Eggplant

   

A Chinese eggplant is the size of young zucchini and tends to be sweet and tender with very few seeds. The Chinese traditionally don't peel this eggplant because the skin preserves its texture, taste and shape. Use it as you would a "common" eggplant: baked, stir-fried, or even steamed
