Also known as French endive or Witloof Chicory, a relative of curly
endive and escarole. Each plant is forced from roots that have been kept
in darkness and warmth so that no chlorophyll develops. Yields creamy
yellow or white leaves. The taste is slightly bitter and texture crisp
and velvety. Sharp in flavor , the tightly packed pale leaves are about
3 to 4 inches long and 1 inch wide.
